Shrimp Ceviche

Ingredients

  • 1LB Raw, deveined shrimp – no tails
  • 1 small onion, chopped
  • ½ cup chopped cherry tomatoes
  • 1 orange
  • 1 lemon
  • ¼ cup fresh cilantro
  • 2 tsp Kosher salt
  • 1 Tbs Bazodee® Soca Sauce or Hot Hot Soca Sauce

Optional

  • ½ cup chopped avocado
  • Fresh basil leaves

Directions

  1. Place shrimp in 4 cups of rapidly boiling water with 1 tsp of kosher salt
  2. After 3 minutes, remove and shock in a bowl of ice cold water
  3. Strain and place in glass or ceramic bowl
  4. Cut shrimp into ½ inch pieces
  5. Add juice of 1 orange and 1 lemon
  6. Add onion, cherry tomatoes, 1 tsp salt and Bazodee® Soca Sauce or Hot Hot Soca Sauce
  7. Mix all ingredients and marinate for 1 hour

Optional

  1. Just before serving add chopped avocado
  2. Serve in a martini glass and garnish with basil leaf
